Sowulo (Roasted Acerglyn Mead 15%)
A beautiful mead made with different ingredients:
First, a mixture of honey, date syrup and maple syrup is heated. Caramelization creates many different tones of caramel.
This syrup is added to half honey and half maple syrup (also called Maple Syrup), after which it is fermented with special yeast.
The addition of fermented Japanese soya in combination with Cuminum Cyminum makes this aperitif particularly exciting to drink. A true voyage of discovery of sweet, salty and umami (the 5th taste)!
