Berkana (Birch & Acacia co 10%)
A very special experiment by our brewmaster. A mead that has been on the wish list to make for a long time. But, because some ingredients are only available in season. it took a long time before this mead was ready.
A mead made from pure birch sap and acacia honey. After fermentation, there was further maturation on birch leaf and medium toast acacia wood.
The taste can be described as a balance between slightly sweet, slightly bitter and slightly sour. A very delicate taste, in which you can taste nature. Fluidly soft in character.
